Grilled peach and burnt heather honey ice cream

Grilled peach & burnt heather honey ice cream is a delicious way to cool you down as the warmer weather begins. We are delighted that Michael from Hot Buttered Crumpets has created this bespoke recipe using our honey. 

(You will need an electric whisk, blender or ice-cream maker to make this!)

Ingredients:

4 ripe peaches, 
300ml whole milk, 
300ml double cream, 
6 egg yolks, 
50g heather honey
75g caster sugar

Method:

1) Gently heat the milk and cream until it starts to steam. Meanwhile, half, de-stone and on a medium heat, fry the peaches with a tablespoon of sugar in a griddle or frying pan and cook until caramelised. Once golden, set the peaches to one side and in the same pan, add your honey and let it reduce until it’s dark and caramelised too, it won’t take long. Add the peaches and honey to a blender and blend until smooth.
2) In a large mixing bowl, whisk the egg yolks and sugar together, then gently pour in the milk/cream and whisk until fully incorporated. Return the mix to the pan, add the peach purée and stir continuously. Heat up to 82c or until it is thick and coats the back of the spoon. Pour the mix into a clean bowl, cover with cling film and leave to cool completely.
3) One cool, churn in your ice cream machine for 45 minutes, transfer to a container and freeze! If you don’t have a churner just freeze but it may not be as smooth!
